I'm a big fan of Dokuwiki

http://wiki.splitbrain.org/wiki:dokuwiki

It's simple, easy to use, doesn't require a database backend (perhaps
this means it doesn't scale well...), and has a plugin (one of many)
that allows you to embed LaTeX markup directly.
